Jungle Bird
The Jungle Bird is the Malaysian cocktail: blackstrap rum, Campari, and pineapple.
I swap the usual simple syrup for a thin gula melaka syrup, 1 part sugar to 1 part water by weight. A thicker syrup will over-sweeten it.

- Batch everything but the lime ahead. Juice the limes the afternoon you drink it, not the night before.

Per 64 oz bottle
- 16 ozblackstrap rum
- 8 ozCampari
- 16 ozpineapple juice
- 5.5 ozfresh lime juice
- 5.5 ozgula melaka syrup, thin 1:1
- 13 ozcold water
Gula melaka syrup, for two bottles
- 200 ggula melaka
- 200 gwater
Method
- Make the syrup by dissolving 200 g gula melaka in 200 g water. That covers the 11 oz two bottles take.
- Add the rum, Campari, pineapple juice, syrup, and cold water to the bottle. All the water goes in now.
- On the day, juice the limes in the afternoon and add the lime juice.
- The bottle will be full. Cap it and invert until mixed. Do not shake.

- Shopping for two bottles: about 1 L blackstrap rum, about 500 ml Campari (375 ml is not enough), and about 1 L pineapple juice.
